


As Easter is approaching quickly, we wanted to prepare a recipe for a healthy and tasty dessert that would look like Easter eggs. As a base, we took almond flour and mixed it with prunes and nuts. Almond flour is gluten-free, adds a nutty flavor, and is an excellent source of protein and fiber. Prunes have a subtle sour-sweet flavor and are used in Ukrainian recipes for stews, salads, cakes, and chocolates. So, we decided, why won’t we combine prunes with almond flour instead of regular wheat flour and see what happens?
The taste of our dessert is very delicate; it is not overcooked and contains only natural products. Almond flour goes well with coconut oil, which is nutty and sweet. Maple syrup is a great sugar substitute. However, if the syrup is unavailable in your area, add honey or sugar to the almond dough. Try this recipe with dates too, and you won’t need sugar! We still prefer prunes, as they add a more delicate, subtle, and at the same time, rich taste. Prunes pair well with almonds and walnuts; we can’t wait to show you how to make other great desserts with them.
The Easter eggs from almonds and prunes will satisfy anyone’s sweet tooth. This dessert is also nourishing and packed with protein and antioxidants. How to Make Almond Easter Eggs
Equipment
- 1 baking pan
- 1 bowl
Ingredients
- 250 g almond flour
- 15 prunes, washed and sliced
- 100 g nuts, chopped walnuts, almonds or peanuts
- 4 tbsp coconut oil
- 4 tbsp maple syrup
Instructions
- Combine almond flour with sliced prunes, add coconut oil and maple syrup, and mix well. Add nuts to the mixture and mix again.

- Knead the dough gently with your hands. Leave it to rest for 10 minutes.

- Meanwhile, line the baking dish with parchment paper, and preheat the oven to 180 C (350 F).
- Take a piece of the dough and roll an egg, then place it on the baking pan. Continue until all the dough is used.

- Bake for 12-15 minutes.
- Remove the eggs from the oven and cool them at room temperature for about 20 minutes. They need some time to become a little firmer; however, the texture will still be relatively soft.
- Serve. There is no need to refrigerate leftovers. You can sprinkle the eggs with coconut flakes.

Nutritional and health benefits of this dessert
The primary nutritional value of this dessert is that it is made with natural products and gluten-free flour. Almond flour contains protein and fiber. It is nourishing, but it is also high in calories and fats. As a precaution, don’t overeat cookies or other desserts made with almond flour. Prunes are loaded with antioxidants. They contain vitamins C, B6, A, and K, Potassium, Calcium, Iron, Copper, and Magnesium. Prunes are very nutritious! Everyone knows they can prevent constipation, but this is not the only health benefit of prunes. They also help promote bone and heart health and lower blood sugar.
