Ukrainian Black Radish with Carrots and Eggs
If you want to soften the bitter taste of the black radish, add carrots and hard-boiled eggs! In the second recipe we try to balance out the sharpness of the black radish by adding sweet notes and replacing garlic with green onions.

- 2 black radishes, peeled
- 1 small carrot, peeled
- 2 hard-boiled eggs
- spring onions
- parsley
- 3 tbsp mayonnaise
- 1 tspn black pepper freshly crushed
- ¾ tspn salt
Grate the peeled black radishes and put in a bowl.
Grate carrot and boiled eggs finely.
Chop green onion and parsley.
In a bowl, combine black radish with carrots, eggs and greens. Mix well.
Season the salad with mayo. Salt to taste and sprinkle with black pepper.
Serve cold.
