Cut zucchinis. Don't make pieces too small or thin.
Put butter in a casserole and melt it over medium heat. Put zucchinis into the casserole dish, and stir well. Cover with a lid and let the zucchinis simmer.
Cut sweet red peppers and add them to the mixture in the casserole too.
As the veggies continue to simmer, chop the carrot into small pieces and add to the mixture. Add bay leaves, paprika, and black pepper to the vegetables.
Peel and cut potatoes into squares. It is about time to add them too.
Slice tomatoes and also add them to the mixture in the casserole.
While you continue to simmer your vegetables in a casserole under a lid, chop onion and garlic and fry them in a preheated skillet. Once the onion and the garlic become golden-brown, add them to the veggie mixture.
Add a tablespoon of semolina as thickening agent and mix well with the vegetables. Don't forget to cover the casserole dish with the lid again.
Lastly, chop finely parsley and dill, sprinkle them over the simmering vegetables for extra flavor and freshness.
Serve hot or warm. You may want to top the saute on plates with shaved hard cheese - it goes well with this recipe! Enjoy!
