Ingredients
  

  • 4 zucchini
  • 4 sweet red bell peppers
  • 2 tomatoes
  • 1 carrot
  • 2 potatoes
  • 1 onion
  • 5 galic cloves
  • 1 tbsp semolina
  • 50 g unsalted butter
  • salt to taste
  • 1 tbsp paprika
  • black pepper to taste
  • 2 bay leaves
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tbsp olive oil (for frying)

Instructions
 

  • Cut zucchinis. Don't make pieces too small or thin.

  • Put butter in a casserole and melt it over medium heat. Put zucchinis into the casserole dish, and stir well. Cover with a lid and let the zucchinis simmer.

  • Cut sweet red peppers and add them to the mixture in the casserole too.
  • As the veggies continue to simmer, chop the carrot into small pieces and add to the mixture. Add bay leaves, paprika, and black pepper to the vegetables.
  • Peel and cut potatoes into squares. It is about time to add them too.
  • Slice tomatoes and also add them to the mixture in the casserole.

  • While you continue to simmer your vegetables in a casserole under a lid, chop onion and garlic and fry them in a preheated skillet. Once the onion and the garlic become golden-brown, add them to the veggie mixture.

  • Add a tablespoon of semolina as thickening agent and mix well with the vegetables. Don't forget to cover the casserole dish with the lid again.
