We used to make it quite often in Ukraine and continue preparing the beet salad when we are in the mood to eat something special.

This recipe is an excellent example of how different flavors can perfectly complement and balance each other.  Adding other ingredients, spices, or herbs to the recipe is not recommended. Avoid adding salt as well, as it can change the salad’s unique sweet and sour flavor. You may want to substitute walnuts with pecans, but this is probably the only modification that won’t change the taste of this salad dramatically. The most time-consuming part of the cooking will be boiling the beetroots. Although, if you have a fast cooker pot, this won’t be a problem. Otherwise, please allocate approximately an hour for boiling the beets and making them fork-tender. You do not need to do any other cooking, and once the beets are ready, the preparation will take only 15 minutes. If you don’t like mayonnaise use sour cream instead or one table spoon of sour cream and one table spoon of mayo. Ingredients
  

  • 5 medium-sized beets, cooked and peeled
  • 5 garlic cloves
  • 10 prunes
  • 10 walnut halves
  • 2 tbsp mayonnaise

  • Grate the boiled, peeled, and cooled beets in a bowl.
  • Slice prunes, chop walnuts, and grate garlic.
  • Combine prunes, walnuts, and garlic with the beets and mix well.
