The pumpkin and apple combination delivers a tender sour-sweet flavor, and cinnamon adds a spicy touch to the taste. It is not unusual to make dishes from scratch in Ukraine, and every woman has her own little secret on how to make her dish special. Our little secret is that we replaced most of the flour with semolina and milk with kefir in our recipe.
Pumpkin pancakes (“Oladky z harbuza”) can be served at breakfast or lunch, and leftovers can be saved for a quick snack with coffee or your other favorite beverage later in a day. Pumpkin Pancakes (Oladky z Harbuza)

Ingredients
- 500 g pumpkin or squash peeled
- 1 apple peeled
- 250 g semolina
- 4 tbsp flour
- 2 eggs
- 100 g kefir
- 100 g sugar
- 3 tbsp sliced almonds slightly roasted
- 1 tbsp cinnamon
- 1 tbsp baking powder
- ½ tspn salt
- vegetable oil for brushing
Instructions
Method of Preparation
- Cut pumpkin into big chunks and chop finely in food processor. Add apple, and blend well with pumpkin. Set aside in large bowl.
- Add eggs, kefir, cinnamon, and sugar and whisk together with pumpkin and apple.
- In medium-sized bowl, combine semolina, flour, baking powder, and salt.
- Combine wet and dry ingredients, add sliced almonds, and whisk again.
- Let the mixture sit for 20 minutes.
- In 20 minutes, preheat a nonstick skillet, reduce the heat to medium and brush it with vegetable oil.
- With a tablespoon, pour pumpkin batter on the skillet to form pancakes. Bake on one side until slightly golden, then use spatula to turn pancakes to the other side and grill them for another minute.
- Place ready pancakes on a plate covered with a paper towel to remove excess oil.
- Serve warm with sour cream, maple syrup, or fruit.
